3 T chia seeds
1 cup almond milk or lactose free cows milk
1 T maple syrup
1 tsp vanilla extract
1 cup of puréed kiwi
Top with berries
Mix chia seeds and milk of choice well . Add maple syrup and vanilla extract and mix well. Cover and refrigerate for 4 hours or until it is pudding thick.Mix kiwi purée with pudding and top with berries Enjoy!
Chia seeds are naturally high in fibre and both the kiwi fruit and chia seeds are prebiotics, (great food to help multiply the healthy bacteria in your gut). There is also recent evidence that indicates that 2 kiwi fruit a day appears to be a safe and effective intervention to manage constipation and it's also a low FODMAP food.
